Our blackberry puree is packaged under aseptic conditions to ensure maximum freshness and extended shelf life without the use of preservatives. Packaging options include industrial-sized drums and aseptic bags to meet different customer needs. Once opened, the puree should be stored in refrigeration at 4°C and consumed within 7 to 10 days to maintain its quality and flavor.
• Receiving & Transfer: Fresh mulberries are received and gently transferred using a mono pump to maintain their integrity.
• Ascorbic Acid Addition: Vitamin C is added to prevent oxidation, preserving the puree’s natural color and nutritional value.
• Crushing: The fruit is gently crushed into a uniform pulp.
• Pre-heating: The pulp is preheated to deactivate enzymes that could affect taste or appearance.
• Two-Stage Sieving: Seeds, skins, and other impurities are removed through a two-step sieving process, resulting in a smooth, consistent puree.
• Two-Stage Concentration: Excess water is removed in two phases to intensify flavor and improve texture.
• Aseptic Packaging: Finally, the puree is sealed aseptically, ensuring freshness and safety without the need for preservatives.
